1 pound (450 g) raw shrimp, peeled, deveined, and chopped
¾ cup (180 ml) freshly squeezed lime juice
¼ cup (60 ml) freshly squeezed orange juice
½ cup (75 g) red onion, finely diced
1 cup (150 g) cherry tomatoes, finely chopped
½ cup (75 g) cucumber, diced
1 medium jalapeño, finely minced
¼ cup (15 g) fresh cilantro, chopped
1 teaspoon sea salt
½ teaspoon ground black pepper
1 tablespoon olive oil
Place the chopped shrimp in a non-reactive bowl.
Pour lime and orange juice over the shrimp and stir gently.
Cover and refrigerate for 20–25 minutes, stirring once halfway through.
Drain off half of the citrus liquid once the shrimp turns opaque.
Add onion, tomatoes, cucumber, jalapeño, and cilantro.
Season with salt, pepper, and olive oil, then mix gently.
