  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Bring water and milk to a boil. Slowly whisk in grits, reduce heat, and simmer 20–25 minutes until creamy. Stir in butter, cheese, salt, and pepper.
  2. Season shrimp with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  3. Heat olive oil and 1 tablespoon butter in a skillet. Cook shrimp 2–3 minutes per side. Remove and set aside.
  4. Add remaining butter and garlic to skillet. Sauté briefly, then add chicken broth and simmer.
  5. Stir in heavy cream and lemon juice. Simmer until slightly thickened.
  6. Return shrimp to skillet and coat in sauce.
  7. Serve shrimp over warm grits and garnish with parsley.
