A tender breakfast cake bursting with tart cranberries and fresh orange flavor, finished with a light citrus glaze.

1 1/2 teaspoons baking powder (6 g)
1/2 teaspoon baking soda (3 g)
1/2 teaspoon salt (3 g)
1/2 cup unsalted butter (113 g)
3/4 cup granulated sugar (150 g)
2 large eggs
1 tablespoon orange zest (6 g)
1/2 cup fresh orange juice (120 ml)
1/2 cup Greek yogurt (120 g)
1 teaspoon vanilla extract (5 ml)
1 1/2 cups cranberries (150 g)
1 cup powdered sugar (120 g)
2 tablespoons orange juice (30 ml)
1/2 teaspoon orange zest (1 g)

Instructions

  • Preheat oven to 175°C (350°F) and prepare pan.

  • Whisk dry ingredients together.

  • Cream butter, sugar, and zest; add eggs and wet ingredients.

  • Mix in dry ingredients and fold in cranberries.

  • Bake 40–50 minutes until set.

  • Drizzle with orange glaze once cooled.

Notes

Do not overmix the batter. Use fresh zest for maximum citrus flavor. Allow cake to cool before glazing for best texture.
