Easy Cucumber Caprese Salad is a light and refreshing dish made with crisp cucumbers, ripe tomatoes, fresh mozzarella, basil, olive oil, and a touch of balsamic. It is perfect as a side dish or light meal.
2 English cucumbers, sliced into 1/4 inch rounds
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella balls, drained
1/4 cup fresh basil leaves, torn
3 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze or 2 teaspoons balsamic vinegar
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
Wash and slice the cucumbers into 1/4 inch rounds and place them in a large bowl.
Halve the cherry tomatoes and add them to the bowl.
Drain the mozzarella balls well and add to the mixture.
Tear the basil leaves and sprinkle over the salad.
Drizzle olive oil and balsamic over the top.
Season with salt and black pepper.
Gently toss until evenly coated and serve.
