Cowboy Pasta Salad is a hearty blend of pasta, grilled meat, black beans, corn, cheddar cheese, and a creamy barbecue dressing perfect for gatherings and make-ahead meals.

Ingredients

  • 12 ounces rotini or penne pasta
    2 cups cooked grilled chicken steak or smoked sausage diced
    1 can 15 ounces black beans rinsed and drained
    1 cup corn kernels fresh grilled or drained canned
    1 cup cherry tomatoes halved
    1 red bell pepper diced
    1/3 cup red onion finely chopped
    1 cup sharp cheddar cheese cubed
    1/2 cup mayonnaise
    1/3 cup sour cream
    1/3 cup barbecue sauce
    1 tablespoon apple cider vinegar
    1/2 teaspoon smoked paprika
    Salt and black pepper to taste

Instructions

  • Cook pasta in salted boiling water until al dente then drain and cool completely.

  • Prepare and dice cooked meat into bite-sized pieces.

  • In a large bowl combine pasta beans corn tomatoes bell pepper onion cheese and meat.

  • In a separate bowl whisk mayonnaise sour cream barbecue sauce vinegar smoked paprika salt and pepper.

  • Pour dressing over pasta mixture and toss gently to coat.

  • Cover and refrigerate at least 1 hour before serving.

  • Stir gently and adjust seasoning if needed before serving.
