A light and refreshing seafood roll inspired by traditional East Coast summers, featuring tender shrimp in a creamy, citrus-kissed dressing served in a buttery toasted roll.

Ingredients

·         1 lb (450 g) large shrimp, peeled and deveined

·         4 cups (950 ml) water

·         1 teaspoon salt

·         1/2 teaspoon black pepper

·         1/2 teaspoon paprika

·         1/4 teaspoon garlic powder

·         1/4 cup (60 g) mayonnaise

·         1 tablespoon fresh lemon juice

·         1 teaspoon lemon zest

·         2 tablespoons finely chopped celery

·         2 tablespoons finely chopped green onion

·         1 tablespoon chopped fresh parsley

·         4 split-top rolls

·         3 tablespoons unsalted butter, softened

Instructions

1.      Bring water and salt to a gentle boil, then cook shrimp for 2–3 minutes until pink and opaque.

2.      Transfer shrimp to an ice bath, then drain, pat dry, and chop into bite-sized pieces.

3.      Mix mayonnaise, lemon juice, lemon zest, black pepper, paprika, and garlic powder in a bowl.

4.      Fold in shrimp, celery, green onion, and parsley until well combined.

5.      Butter the rolls and toast in a skillet until golden.

6.      Fill rolls with shrimp mixture and serve immediately.

Notes

For best flavor, use fresh shrimp and assemble the rolls just before serving. Chill the shrimp mixture briefly if you prefer a cooler filling.
