Chicken Cobb Pasta Salad combines grilled chicken, crisp bacon, avocado, tomatoes, blue cheese, and pasta tossed in a creamy dressing for a hearty and colorful meal.

Ingredients

3 cups cooked rotini pasta
2 cups cooked chicken breast, diced
6 slices bacon, cooked and chopped
1 cup cherry tomatoes, halved
1 cup romaine lettuce, chopped
1 avocado, diced
2 hard boiled eggs, chopped
1/2 cup blue cheese crumbles

Dressing:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt to taste
Black pepper to taste

Instructions

  • Cook pasta in salted boiling water until tender. Drain and cool completely.

  • Grill or cook chicken breast and cut into small cubes.

  • Cook bacon until crisp, then chop into small pieces.

  • Slice tomatoes, chop lettuce, and dice avocado.

  • Whisk mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper in a bowl.

  • In a large bowl combine pasta, chicken, bacon, tomatoes, lettuce, eggs, and blue cheese.

  • Add diced avocado gently.

  • Pour dressing over the salad and mix carefully until coated.

  • Chill for 30 minutes before serving.
