Chicken Cobb Pasta Salad combines grilled chicken, crisp bacon, avocado, tomatoes, blue cheese, and pasta tossed in a creamy dressing for a hearty and colorful meal.
3 cups cooked rotini pasta
2 cups cooked chicken breast, diced
6 slices bacon, cooked and chopped
1 cup cherry tomatoes, halved
1 cup romaine lettuce, chopped
1 avocado, diced
2 hard boiled eggs, chopped
1/2 cup blue cheese crumbles
Dressing:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt to taste
Black pepper to taste
Cook pasta in salted boiling water until tender. Drain and cool completely.
Grill or cook chicken breast and cut into small cubes.
Cook bacon until crisp, then chop into small pieces.
Slice tomatoes, chop lettuce, and dice avocado.
Whisk mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper in a bowl.
In a large bowl combine pasta, chicken, bacon, tomatoes, lettuce, eggs, and blue cheese.
Add diced avocado gently.
Pour dressing over the salad and mix carefully until coated.
Chill for 30 minutes before serving.
