3 cups cooked chicken breast diced
3 cups cooked rotini pasta
2 cups broccoli florets
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/4 cup finely diced red onion
1/2 cup shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder

Instructions

  • Cook pasta according to package instructions until tender.

  • Drain and rinse pasta with cool water, then allow it to cool completely.

  • Cut broccoli into small florets. Lightly blanch for one minute if a softer texture is preferred.

  • Dice cooked chicken into bite-size pieces.

  • In a large bowl whisk mayonnaise, Dijon mustard, lemon juice, salt, pepper, and garlic powder.

  • Add cooled pasta and stir to coat with dressing.

  • Add chicken, broccoli, red onion, and shredded cheese.

  • Gently mix until all ingredients are evenly distributed.

  • Cover and refrigerate for at least one hour before serving.
